Also called Italian Wedding Soup, this is a great soup for the holidays!
Ingredients
Meatballs
- 1 organic, cage free egg
- 1/2 c parmesan cheese
- 1 small onion
- 1 tsp sea salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 2 lb ground turkey
- 2 tbsp coconut oil
Soup
- 1 qt organic chicken broth
- 1 c organic spinach, chopped
- 1 tsp onion powder
- 1 tbsp chopped parsley
- 1 tsp sea salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Directions
In a bowl, combine all meatball ingredients. Shape into 1 inch balls. Fry in coconut oil until done. Set aside. Mix other ingredients in a saucepan and bring to a boil. When spinach is wilted, add meatballs into the soup and serve.
